Victoria Sponge Recipe

Everyone loves a good old Victoria Sponge Cake, right?! I’m not sure how exactly I manage it, but every cake I bake seems to come out so light and fluffy every time, and friends and family are always asking me to bring them cakes (my mum even asked me to make my own birthday cake this year!) So, I thought I’d share my recipe with you!


For the cake:

  • 6oz/170g self raising flour, sifted
  • 6oz/170g caster sugar
  • 6oz/170g butter or margarine (I use Flora)
  • 3 large eggs
  • 1 1/2 tbsp baking powder
  • 2-3 drops vanilla essence

For the filling:

  • 6oz/170g icing sugar, sifted
  • 1oz/30g butter
  • 1 tbsp milk
  • 2-3 drops vanilla essence
  • fruit jam



  1. Sift the self-raising flour & baking powder into a large, airy mixing bowl.
  2. Add in the caster sugar, then the rest of the ingredients.
  3. Mix with an electric whisk.
  4. Preheat the oven to 180°c.
  5. Line two 8″ cake tins with greaseproof paper.
  6. Transfer the cake mix evenly into the two cake tins
  7. Cook for 30 mins.
  8. Once cooked, transfer to a cooling rack until the cake has cooled.
  9. To make the icing, melt the butter, milk, and vanilla essence in a pan on medium heat.
  10. Once melted, add in the icing sugar in one go, then stir until everything has combined. If it’s a bit thick, add a bit more milk and stir.
  11. Take one of the sponges and completely cover one side with the icing.
  12. Add a fruit jam of your choice onto the top of the icing.
  13. Put the other sponge on top, then add a light dusting of icing sugar to the top of the cake.
  14. Enjoy!
